This morning I had a craving for pancakes.  I recently cut out a recipe for peanut butter pancakes from a supermarket food magazine, but couldn’t find it today so made up my own version and served them with stewed apple & cinnamonlive natural yoghurt and maple syrup.  Here’s the recipe if you fancy giving it a go yourself →

  • 1/2 cup of live natural yoghurt
  • 3 medium free-range eggs
  • 1/2 cup wholemeal flour
  • 2 tbsp smooth whole-nut peanut butter
  • 1 tbsp maple syrup
  • 1/2 tsp bicarbonate of soda

Heat frying pan to medium and grease with coconut oil (or other oil).  Whiz all ingredients in a blender until incorporated.  Spoon approx 2 tbsp of mix at a time into the pan and encourage it to spread out slightly using a spoon or by titling the pan.  Bubbles should appear on the pancake’s surface and when it looks firm enough it can be flipped to brown the other side.  Cooked pancakes can be placed on a plate in the oven (on a low heat) to be kept warm until all of the rest are done.
