GBBO Pastry Week: Baked Sweet Potato Samosas

These were an adaptation of Jamie Oliver’s recipe for Baked Veggie Samosas but using gorgeous sweet potato instead of regular spuds.  The recipe appears long and complicated, but is definitely worth the effort – and a good reminder of how much flavour comes from using whole spices rather than the (often ancient) ready ground variety.

I consumed mine with yoghurt and mango chutney (not home-made although I aim to get round to doing this one day).  I reckon this type of pastry could be used to house loads of different fillings (goats’ cheese, spinach etc) and look forward to a bit of experimenting.
