Necessity is the mother of invention: fresh basil, whole almonds, ground almonds, sea salt, garlic, pepper, olive oil (ratio of ingredients to taste).

I wanted to make pesto to use up dying supermarket basil plant but had no pine nuts or Parmesan. The whole and ground almonds made a pleasing substitute and the pesto tasted great with pasta, in humous and spooned onto butternut squash soup 🙂
