Ital inspiration


I adapted this spicy soup recipe from Levi Roots to bring some Caribbean sunshine to my Mum’s birthday dinner party held on a stormy September day…

  • 1 tbs vegetable oil
  • 1 large red onion, chopped
  • Two tins of chopped tomatoes
  • 2-3 sweet potatoes, cubed
  • A handful of green beans, sliced
  • 1 courgette, diced
  • 1 tin of kidney beans
  • Creamed coconut (about a third of a block)
  • 1 tsp ground ginger
  • 1 tsp hot chilli powder
  • Water
  • 1 tbs fresh marjoram, chopped

I heated the oil and cooked the onions for a few minutes before adding all the other ingredients (and just enough water to make it a thick soup consistency).  I let it simmer on a low heat for at least half an hour – until the veg was cooked, stirred occasionally and served with different types of bread.  Even my brother liked it 😀
