After 6 weeks of (mainly) eating out whilst making the most of my summer holidays I am looking forward to/ desperately in need of some simple home cooked food.
Soybean and chilli burgers (100g dried soybeans (cooked), 1/2 tsp chilli flakes, tsp dried coriander, 1 slice bread made into crumbs, 1/2 red onion, 1 beaten egg, salt and pepper – whizzed together in food processor, formed into 8 mini-burgers, shallow fried and finished off in oven)
Sweet potato chips (1 sweet potato cut into chips, drizzled with 1tsp sesame oil & 1tsp soy sauce, pinch of pepper – roasted in hot oven until cooked)
Tricolour salsa (finely chopped red onion, tomato, yellow pepper and cucumber, mixed with a little white wine vinegar and fresh lime juice)
The subtly spicy, nutty burger; sublimely sweet and salty chips; and fresh, zingy salsa created a combination as pleasing to the eye as the mouth. I will be giving this a go again very soon (although I will try to resist eating it long enough to take a photo next time…)
